Rocky Road Cookies

Rocky Road Cookies
 I’ve been dealing with a terrible cold this past week and therefore spending most of my time laying around the house. In effort to not die of sheer bordum, i've been using Pinterest for inspiration, I found a picture for Rocky Road cookies that looked delicious. I wasn’t a fan of the recipe that accompanied the pin so I decided to experiment with my own recipe. They turned out gooey and delicious  - perfect to leave for Santa!

Ingredients:
  • ·      1 cup all-purpose flour
  • ·      ½ cup unsweetened cocoa powder
  • ·      ½ teaspoon baking soda
  • ·      ½ teaspoon salt
  • ·      8 ounces of semi-sweet chocolate chips; divided
  • ·      1 stick unsalted butter
  • ·      ½ cup sugar
  • ·      2 large eggs
  • ·      1 teaspoon vanilla extract
  • ·      1 cup chopped hazelnuts
  • ·      ½ cup of mini marshmallows
Directions:
  1. Preheat oven to 325 degrees. In a small bowl whisk together flour, cocoa powder, baking soda, and salt; set aside. In a small heavy pan melt 4 ounces of chocolate chips with the 1 stick of butter on a low heat until it is all melted.
  2. Transfer the chocolate sauce to the bowl of an electric mixer fitted with a paddle attachment. Add sugar, eggs, and vanilla to the bowl; mix on medium speed until well combined. Reduced the mixer speed to low; gradually mix in flour mixture until well combined. Turn off the mixture and fold in the rest of the chocolate chips and nuts into the dough.
  3. Scoop the batter into 1 inch balls and place each one 2 inches apart of a parchment-lined baking sheet. Using the back of a spoon slightly flatten the balls, and then place 3-4 mini marshmallows on top of each cookie.
  4. Bake until the cookies are flat and the surface begins to crack, the marshmallows are melted and begin to brow; about 15 minutes. Transfer the cookies to a wire rack to cool.

  1. Oh my gosh. Cookies + marshmallows? That sounds so good! If I didn't already have my holiday treats all planned out, and all the ingredients already bought, I think I'd try these.
