Bacon & Pea Carbonara

Bacon & Pea Carbonara

I’m a huge pasta fan but plain marinara sauce and pasta can get very boring after the 3rd night in the a row. I’m currently in a desperate need of a trip to the grocery store so I decided to just pull everything I had in my fridge; bacon, cheese, and peas with pasta make for a delicious and quick dinner.

Ingredients:
-      - 1 lb of Lemon Pepper pasta
-      - ½ lb of turkey bacon
-      - ½ cup of Tuscan Oil
-      - 1 tablespoon minced garlic
-      - 1 cup of peas
-      - ¼ cup of freshly grated Parmesan cheese

In a large pot of salted water, boil the lemon pepper pasta until al dente.
In a large frying pan, fry up the bacon in large pieces. Once bacon is crispy remove the bacon to drain on some paper towel. Using the same frying pan add the Tuscan oil and minced garlic, heat until the garlic becomes fragrant. Cut up the bacon into small pieces and add it back to the pan along with the peas; cook until well heated. Add the cooked pasta to the pan and toss until well incorporated. Sprinkle with some freshly grated Parmesan cheese. ENJOY!
