Who is ready for some epic breakfast food?! You guys, today I’m serving up one of my new favorite breakfast dishes – ham fried rice with a fried topped with a sunny side up egg. YAASSSS!
These past two weeks have been a bit of a whirlwind for me; first my brother came to visit me for a week and than my grandma came into town to spend Easter weekend with me. It’s been nice to have my family around, although I will admit that I’m straight up exhausted.
While my grandma and I kept our Easter dinner somewhat low-key, we did make sure to that honey baked ham on the table. Just like Thanksgiving, I feel like leftovers can get stale the day after stuffing your face with holiday food. I’ve got a ton of leftover ham in the fridge right now and I’m getting creative with my meals.
First up, this breakfast ham fried rice was something I came up with on a whim on Monday and I can tell you that it was beyond delicious. I keep a big batch of either rice or quinoa in my fridge at all times, and last week I added peas to my rice for some extra veggie action. Combined with leftover Easter ham and soy sauce, this ham fried rice was the perfect mix of carbs and protein in one easy to make breakfast meal. Topped with a runny fried egg – I was in heaven.
I loved it so much, I made this dish again this morning and topped it off with some slices of fresh avocado for a boost of deliciousness.
